Neither a book nor multiple, but Nobutaka Aozaki's From Here To There is nice update to Stanley Brouwn's classic This Way Brouwn work (see here). It's a map of Manhattan made entirely from scribbled drawings strangers on the street have given to the artist when he visits the city and asks for directions.
